If you chose to move Rxb7, it would play out as follows.

1. ... Rxb7
2. Qxh5+ Kg8
3. Nxf2

If:

Mate to follow in 2

White can # on move 3 on d8 or h5 but it does him no good.
h5 prolongs the end but he loses the Q.

3 Qxh5 QxQ
4 Rook moves Qe2 or f2
Mate follows.
