because Nigth at g4 threaten mate.

white queen can't even protect going to h4.
yes that would prevent mate, while losing more material than with Qxe7:

Qh4 Ne3+
Ke1 Ng2+ and losing the queen

Exactly

Qxe7 keeps White in the game , and Black has no quick mate and is only +2

Nf3 is easiest explained by using the alternate button , with Black is in danger of losing her Knight
