Why not do Qxb7 as white instead of QxKnb3?

White fork and kills a rock, but that is a better trade off for white I tink, plus you could do some kind of attack with knight in the middle too.

I don't understand what you mean with KnxKn check etc... Black can't take a knight in that position.

After 2. Qxb7 black has 2. - Nc2+ and takes the Rook for a pawn, that is better than Q for B and N.
