I usually play now 1.e4 2.Nf6 3.Bc4 4.Ng5 or Ne5 but if opponent is protecting both squares i play d3 or d4. I'm looking for openings that are not too advanced but are effective against opponents in my range

It would help if you explained why you're unhappy with your current opening. Modern masters sometimes play the opening you describe (The Italian Game) so it clearly is an acceptable way to open the game. Explaining a bit more why you dislike this opening setup may help in recommending something with which you'd be more happy.

When I do my normal opening I am trying to fork my opponents queen and rook, but usually my oponnent plays d5 and cramps my setup. I would like to play a more open opening

playing with e4 or d4 usualy leads to open games, especially if you play a gambit. I would not reccomend playing so tactically in the opening, it can easily backfire on you in the middle game.

The thing is, you can't play for one move cheapos. You have to expect that your opponent will see your threat and respond accordingly. Only make threats that, when defended against, still improve your position. Only play the knight to e5 or g5 to fork on f7 if your threat cannot be stopped or if you have a followup in mind if the initial threat is stopped.
Specifically, if you're allowing Black to play ...d5 when you have a bishop on c4 and a pawn on e4, something's wrong. You control d5 twice and Black controls it once (with the queen). If Black makes a move to support a ...d5 pawn advance, you should be able to either bring additional pressure against d5 to stop the advance or find enough play elsewhere to counter Black's idea. If you want a more open game, you should be able to play d4 yourself (since you have a knight of f3 and a queen on d1 supporting a d-pawn advance).
