Why not 2...b5? I can't see the mate then.

Good thought, but after:

1. ... h4
2. Rf7 b5
3. cxb5+ Kb6
4. Kc4 Rg4+
5. fxg4 a5
6. bxa5+ Kxa5
7. Rf6

White mates on the next move.
