Why does white play 2. Nxd8 instead of 2. Rxe1?

Only thing I see is:
1. Nf7 Rxe1
2. Rxe1
Gives +1 for Black (-1 for White)

1. Nf7 Rxe1
2. Nxd8 Rxd1+
3. Kxd1 Qxd8
Gives +4 for Black (-4 for White)

So why would white play Nxd8?

As breakerofwind said, after 2...Rf8 black will win an extra piece because of the pin to the queen.

but according to the continuation of this exercise white loses the Knight as well. So what's the difference? I don't think we have found the answer yet.

The point of the puzzle is to find a move for Black which will result in an advantage. Rxe1 accomplishes that since Black winds up with a piece ahead whether White plays Rxe1 or Nxd8.
